Where It All Began

The Story Behind 4 rivers

4 rivers was born from a simple but powerful idea: that the best BBQ in Chicago deserves a permanent home. Founded in 2014 by James Calloway, a lifelong pitmaster who learned the craft from his grandfather in rural Georgia, 4 rivers smokehouse began as a modest weekend pop-up on Devon Avenue — and never left.

The name "4 rivers" honors four tributaries of life that James credits for shaping his passion: the Mississippi, the Cumberland, the Tennessee, and the Chicago River itself — a nod to the city that gave this smokehouse its soul. Each river represents a flavor tradition, blended into the unique 4rivers culinary identity.

From a single smoker to a full-service restaurant seating 80 guests, 4rivers has grown into one of Chicago's most beloved BBQ destinations. Our slow-smoked meats are prepared daily, our sides are made from scratch, and our wood selection is curated for every protein on the menu.

Ten years of slow fires, bold flavors, and a growing family of BBQ lovers — here's how 4rivers became Chicago's smokehouse landmark.

2014

The First Smoke

James Calloway sets up his first smoker at a weekend market on Devon Ave, selling brisket and ribs from a folding table. Lines form within weeks.

2015

A Brick-and-Mortar Home

4 rivers opens its first permanent restaurant at 1259 W Devon Ave, Chicago. The 40-seat dining room fills up every weekend within the first month.

2017

Best BBQ in Chicago

Chicago Tribune names 4rivers BBQ among the top three smokehouse restaurants in the city. The 4 rivers brisket becomes a cult favorite across Illinois.

2019

Catering & Events Launch

4 rivers expands into full-service catering, serving corporate events, weddings, and block parties across Chicagoland with our signature mobile smoker.

2021

Renovation & Expansion

The restaurant expands to 80 seats with a new open-kitchen design, allowing guests to see the smoking process. A dedicated takeout window is added.

2024

Franchise Program Launches

4 rivers launches its franchise program, bringing the 4 rivers smokehouse experience to other cities. The 10th anniversary is celebrated with community events across Chicago.

Third-generation pitmaster with over 20 years behind the smoker. James's brisket rub is the beating heart of the 4 rivers smokehouse identity.

Maria Santos

Executive Chef

CIA-trained chef specializing in Southern cuisine and handcrafted sides. Maria created the legendary cornbread and mac & cheese that keep guests coming back.

Derek Washington

Pit Manager

Derek oversees the daily operation of our smokers, ensuring every brisket and rack of ribs hits the perfect internal temperature and smoke ring.
